Ingredients:
1 Rack St Louis Cut Ribs
Kosher salt
Non salt rub or Homemade Rub
Bbq sauce of choice
Preparation
Pick a good rack of ribs, see video for details
Cut ribs out of plastic and pat dry with paper
Cut off any excess fat
Remove membrane (see video for tips)
Salt ribs, preferably 2 hour before cooking
Sprinkle rub on the ribs, both sides. I like to add enough that it covers all of the ribs but you can still see a little meat. just a little
Place in smoker running at 300 degrees. Leave in for 45 minutes
flip the ribs over and leave in another 45 minutes
Check to make sure the bark is set, when it is, it's time to wrap in foil. Make sure they are bone up and also add about a 1/4 of liquid (soda, watered down bbq, apple juice, the list goes on)
Place back in smoker for 1 hour
make sure you poke in between the ribs with a temp probe or toothpick to make sure the meat is soft like butter
When they are done, Sauce the bottom and then flip them so they are bone down. Then sauce the top.
Let the sauce set for about 15 - 30 minutes
Now they are ready to cut and serve
