German Pancakes (Auflauf)

Ingredients:

  • 1.5 Cups Flour

  • 1.5 Cups Milk

  • 9 eggs

  • 2 T Melted Butter(in pan)

  • 1/2 t kosher salt

  • 2 t Vanilla

Preparation

  1. Put a 9x13 Pyrex into oven with 2 T butter while it comes up to temp(425 degrees)

  2. Mix eggs in bowl and uniform in color

  3. Add half of the flour and mix until incorporated

  4. Add the remaining flour and mix until clumps are gone

  5. add salt, vanilla, and milk. Stir until combined

  6. You can optionally add some freshly grated nutmeg

  7. Once the butter has melted in the Pyrex, pour the batter in the Pyrex and put back in the oven

  8. Bake for 20 Minutes

  9. Cut and serve. My favorite toppings are butter with real maple syrup
