Half Whole Wheat Pancakes

Ingredients:

  • 3/4 cup (100 grams) whole wheat flour

  • 3/4 cup (100 grams) all-purpose flour

  • 2 tablespoons sugar

  • 1/2 teaspoon ground cinnamon

  • 2 teaspoon baking powder

  • 3/4 teaspoon kosher salt

  • 1 1/2 cups (350 ml) milk, dairy or non-dairy

  • 1 large egg

  • 4 tablespoons unsalted butter, melted, plus more for skillet or substitute coconut oil

  • 1 1/2 teaspoons vanilla extract

Preparation

  1. add all dry ingredients Wheat Flour, AP Flour, Sugar, Cinnamon, Baking Powder, and Salt

  2. mix dry ingredients with a whisk

  3. create well in the middle of the batter

  4. add egg to the middle and beat the egg

  5. add milk, butter, and vanilla

  6. mix until combined, don't worry too much about overmixing the pancakes

  7. preheat pan( I prefer Cast Iron because the heat retention browns them better) to about 375.

  8. Add a little butter just before pouring the batter, this will add great flavor and will give it a slightly crispy outside

  9. Cook until you see the batter setting on the sides at least half way up, should also start to see some bubbles and holes

  10. flip and cook until the bottom is browned.
